Home Made Tacos
Each week i will be writing a piece for the paper on nutrition, education and some healthy tips during COVID. Soft home made tacos –
Serves 4
Tacos : Makes 12
3 cups of all purpose flour
1 teaspoon of salt
1 cup of hot water
1/3 cup of olive oil
- Mix dry ingredients in a mixing bowl and slowly add hot water and oil
- Mix well with hands before moving to a slightly floured surface
- Knead the dough until smooth on the outside – then divide into 16 even balls and let rest for 20 minutes
- Roll out each ball evenly into a circle (you might need to add some flour when rolling)
- When ready to cook, make sure the pan is hot and dry- spray a small amount of oil in and cook each tortilla for about 2 minutes on each side. Once they’re all cooked microwave for 30 seconds before serving
Chicken Tacos:
500grams of Chicken Breast
2 tablespoons of Mexican seasoning
¼ purple cabbage
½ lettuce
1 small purple onion
1 tin of corn
1 tin of black beans
½ cup of hommus
Punnet of cherry tomatoes
2 Avocados
Bunch of Coriander
Lemon
Salt and Pepper to taste
- Slice chicken breast into strips and season with Mexican seasoning
- Fry off in a small amount of olive oil over a low heat
- While your meat is cooking you can get all your add ins ready. Cut up lettuce, grate purple cabbage then drain the corn and black beans.
- Slice up cherry tomatoes and chop up coriander and serve all ingredient on a share platter or in separate bowls.
- Mash up two avocados and season with lemon, salt and pepper.
- Once the chicken is cooked you’re now ready to build your own tacos.
- Put the home made tortillas in the microwave for 30 seconds and add what you like - always try to encourage something new to each taco your kids eat! I like to put hommus on the bottom (you can use salsa) then include all your fresh toppings !
** healthy options – if you would like to use a salsa, check the salt intake on the nutrition information panel for foods with 120mg or less per 100g.
