VEGAN SAUSAGE ROLLS
Any good long week entails a platter, friends and too much food being consumed. So lucky they’re not every weekend! For alf grand final i decided to have my first attempt of vegan sausage rolls. Majority of things i make, i throw in a bit of this and a bit of that and its good or bad. For the good ones, i’m always annoyed i didn’t write it down and when people ask for the recipe.. ah sorry . BUT for the first time (in a very long time) iv actually written down the recipe as i went along just praying that they would be good. And i am extremely happy with them and i hope you are too. Below is the recipe and i wold love to hear what you think !
VEGAN SAUSAGE ROLLS
1 onion
2 garlic cloves
¾ cup of uncooked lentils (I used orange lentils but I’m sure any chickpeas or beans would be fine too)
1 medium sweet potato
2 potatoes
1 cup of oats (blended in the nutri- bullet)
300g tomato paste
1 tablespoon apple cider vinegar
2 tablespoons soy sauce
¼ tsp cumin
1 tsp curry powder
½ tsp paprika
¼ tsp ground coriander
½ tsp cinnamon
Puff pastry of choice
Salt and Pepper to taste
* I know this might look like a bit of ingredients but a lot of it is house hold staples for seasoning !
- Preheat oven to 220 deg c .
- Line a tray with baking paper and bake potatoes until soft. You don’t need to put any oil or seasoning on them and they will be mashed up anyway!
- Cook lentils (or drain tined), you could also use chickpeas or beans.
- Once potatoes and lentils have cooled, you can blend them up if you like. I just pressed mine with a fork, as I liked the vegetables a little chunky!
- Add all of the seasoning with the blended oats and cooled vegetables, onions and garlic. Followed by tomato paste, apple cider vinegar and soy sauce. The consistency should be a little wet, if its not you can add a little almond milk or more sauce.
- Lie out pastry sheets and assemble sausage rolls to the size you like. Once you have rolled them brush with almond milk and top with sesame seeds. Baking in the oven on 200degC for about half an hour. ENJOY X
