Gluten Free, Dairy Free, Refined Sugar Free gut loving Banana Bread!

I cannot tell you how many times I have attempted to make healthy banana bread. I have finally come up with one I love with gut repairing properties that can suit just about all dietary requirements! This is a beautifully moist banana bread that can be made as muffins and filled with dark chocolate chips if you like!

It is obvious that what makes banana bread so delicious is just how sweet it is! One slice of banana bread on average contains 47grams of sugar, yes that is per slice. And who only eats one slice when it tastes so good?

47 grams of sugar is equivalent to almost 12 teaspoons. For the average person this is about double the recommended daily intake in one serve. In my many attempts of making banana bread, I had fully removed all sugars (fructose and sucrose). To get close in replacing this sweetness I needed a lot of bananas! And it still didn’t cut it. I tried making it with sweet potato and parsnip to change the texture and I liked that one, but safe to say the rest of the family didn’t.  This recipe has a small amount of natural sugars, mostly being glucose, which is the only sugar your body needs in order to function. Many people would say that sugar is sugar, whatever you use. And in a way that’s true, but there are different types of sugar to compose each different type. This recipe only contains 2 tablespoons of sugar in the entire loaf; this is less than what is in one typical slice, and is refined sugar free. Refined sugar free sources include Rice Malt Syrup, Maple Syrup or Honey, which are all lower on the Glycemic Index than any white sugar that you can buy. This means that it won’t make your blood sugar levels rise and fall as quickly.

This recipe is Gluten Free, and don’t get me wrong I don’t have anything against gluten! This was just about absorbing the moisture from the bananas and liquids required. You’re more than welcome to use 2 cups of Whole meal Flour instead of GF and coconut flour.

I like to use coconut flour and coconut oil as they are readily available to be digested and used by the body. Coconut oil can help improve bacteria and gut health by destroying bad bacteria. 

Banana Bread – Serves 8

1 1/2 cups of Gluten Free SF Flour

1/4 cup of Coconut Flour (optional)

1/2 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon nutmeg

3-4 Ripe Bananas

2 tablespoons of Rice Malt Syrup
(You can also use Honey or Maple Syrup, any natural refined sugar free sweetener of your choice is fine)

1/3 cup of coconut oil

1-teaspoon vanilla extract

2 eggs 

Sprinkle of Salt

- Mixing wet and dry ingredients separately. This is to reduce having clogs of ingredients and if you're using normal flour, it will reduce the amount of gluten sticking together so its free to fluff up.
- When mixing together mix slowly, then transfer to a bread tin. 
- Bake in the oven in 180 degC for about 50 minutes. Let cool before moving to an airing tray.

If you're wanting to make muffins simply cook in muffin tin for 18-20 minutes.
