Bubble and Squeak
With majority of people still avoiding supermarkets when they can (and for good reason!), it can be tricky to think of something for the whole family with a small amount left in the fridge, so what better way than a bubble and squeak! This can be breakfast, lunch or dinner and is naturally free from any packaged products and packed with veggies !
Short simple and ready in under an hour.
Bubble and Squeak- Serves 4 (maybe 6 normal people)
6 medium sized potatoes
1 parsnip
1 leek
1 onion (or two if you don’t like leek)
1 tablespoon seeded mustard
1 tablespoon of garlic
Salt and Pepper
Dads Home made relish (so good that I’m not even allowed the recipe!)
Start by cutting your potatoes, parsnip and onion into 2cm chucks. Put your root vegetables into a large pot of boiling water and boil until soft.
Once cooked remove from the heat and drain the water.
Place the pot back on the heat and add leek, mustard, garlic and season with salt and pepper.
Cook for about 5 minutes.
Once this is cooked transfer all mixture into a cake tin or oven proof pan. Press down and put in the oven for 15 minutes (180degC and fan forced)- to brown the top and make those nice crispy edges.
When you’re ready to serve, fry off four eggs to place on top.
You can serve this with a side of dark leafy greens or just with relish !
