GF Veg Sausage Rolls
Your traditional home made sausage rolls are filled with juicy meat , crispy pastry and an essential at family gatherings. So for those who have a little fear of missing out on food, that are gluten free and/ or vegetarian I have made a delicious alternative !
If you’re vegan, remove the fetta
If you love normal pastry- use normal pastry .
Short , simple, easy and don’t need a million ingredients. Enjoy!
Vegetarian Sausage Rolls
1 tin of chickpeas
1 medium sweet potato
1 cup of dark leafy greens
1 block of feta
1 brown onion
6 cloves of garlic
1 heaped teaspoon of curry powder
1 teaspoon of herb seasoning
Sesame seeds
GF puff pastry sheets
Milk of choice
- Baked sweet potato in the oven on 200degC until cooked through
- Finely dice the onion and garlic
- Roughly chop the dark leafy green (I used silver beat)
- Drain the can of chickpeas, reserving the liquid. Add the chickpeas plus 2 tbsp of the liquid from the can to a food processor and pulse to a rough puree (if you don’t have a food processor you can just mash them with a fork)
- Stir the chickpeas through the vegetable mixture until well combined and season with salt and pepper to taste, curry powder and herb mixture
- While the mixture is cooling, defrost sheets of frozen puff pastry
(I used the GF Simply Wize from Woolies and definitely the best I’ve tried so far !)
- Once the vegetable mixture has cooled mix in the feta so it stays chunky
- Roll the pastry out on the bench into the desired size (if you are using the GF Simply Wize pastry- make sure it is completely defrosted and roll out with a little extra GF flour)
- Divide mixture evenly and roll each sausage roll out
- Preheat the oven to 180C Fan Bake
- Line a baking sheet with parchment or greaseproof paper
- Brush milk over the top of each roll and sprinkle with sesame seed
- Using a very sharp knife, cut them to your desired length
- Place the cut rolls onto the prepared baking sheet and bake for 20-25 minutes until the pastry is golden
