Protein Bread

It’s about day ten of isolation and i’ve made three banana breads, two pumpkin loafs, three lasagnas, 60 sausage rolls, bought 40kilos of tomatoes for pasta sauce and consumed more coffees than usual (its possible). I have started renovating my lounge, pulled of laundry doors, removed all lights and am back to baking cause i cant fix the things i’ve just pulled down (whoops). Isolation has got to me..

With all efforts of avoiding unnecessary supermarket shopping i was able to make up a delicious bread with only what was in the cupboard. It might seem like there are a few ingredients but it was in great effort to empty most jars in the cupboard. What started as a banana bread, turned into a walnut, date, hemp seed protein type loaf that i will definitely be making again. This loaf is gluten free, dairy free, refined sugar free and hopefully as delicious to you as it was to me.

Natural Protein Bread:

4 (very small) bananas

1/2 cup of peanut butter

1/2 cup of coconut oil

1/2 cup of chopped dates

1/2 cup of chopped walnuts

1/3 cup of hemp seeds

1/4 cup of coconut flour

1/4 cup of sunflower seeds
or pumpkin seeds (or mixture)

1/4 cups of protein powder

2 teaspoons of cinnamon

1 teaspoon of nutmeg

1 teaspoon baking powder

2 eggs

  • Turn oven onto 180deg C

  • Mix all day ingredients together then add bananas.

  • Add peanut butter and then coconut oil until at a cake texture.

  • Place in a bread tin with baking paper- please note this will not rise very much.

  • It is thick, so wait for the edges to go darker brown before removing from the oven. It should only take about half an hour- touch the middle of the bread to make sure it does fall through or isn’t too soft.

  • Let rest and then consume with all your self control.
