THE BEST PESTO EVER

I don’t know about you but i love pesto… I could eat it on just about everything ! I often make pesto with a lot of leftover scraps, anything green and any nuts where jar is almost empty you just throw it all in. I wanted to make a MASSIVE batch that i could freeze (or intended to freeze, as it didn’t last that long!) and enjoy daily until then. I had a couple of large bunches of basil ready to go and we were off. I will actually say i ate it straight from the jar multiple nights as it was just that delicious, other days i had it with warm bread, as a dip (like a normal person), in pasta- majority of the time and on top of my avo and eggs.

PESTO:

2 large bunches of greek basil
200g parmesan
200g pine nuts
100g cashews
4 garlic cloves
1 lemon juice
Add olive oil slowly until it’s the consistency you like !
