Salmon , Broccoli and Bean Salad

Everyone needs a good salad that you can have hot or cold, ready to go for work and i honestly think this is it.

Filled with healthy fats and two serves of vegetables it will keep you full all afternoon to avoid that 3pm slump.

I created this one for a meal plan for a client who has IBS so its super easy on the digestive system and only takes 15 minutes to make !

To make two serves you’ll need:

2 salmon fillets
1 head of broccoli
1 handful of dark leafy greens
1 tin of cannelloni beans
1/2 avocado
1 lemon zest
1 heaped teaspoon of mustard
Pumpkin seeds
Salt and Pepper to taste

  • Steam broccoli until cooked through

  • Fry off salmon fillets in a non stick pan

  • Drain the beans and wash your dark leafy greens

  • In a small bowl mix roughly chopped broccoli, beans, mustard, half of the lemon zest and season with salad and pepper. Mix well until all combined and seasoned.

  • To plate up simple start with your dark leafy greens on the bottom and then add your seasoned broccoli and bean mix.

  • Top with cooked salmon, fresh avocado, a squeezed of lemon and some pumpkin seeds.

Probably one of the easiest and quickest salads ever.

You can also add a little garlic to your pan and i have also made it with fresh radishes which is really nice and fresh for spring !
