Salmon , Broccoli and Bean Salad
Everyone needs a good salad that you can have hot or cold, ready to go for work and i honestly think this is it.
Filled with healthy fats and two serves of vegetables it will keep you full all afternoon to avoid that 3pm slump.
I created this one for a meal plan for a client who has IBS so its super easy on the digestive system and only takes 15 minutes to make !
To make two serves you’ll need:
2 salmon fillets
1 head of broccoli
1 handful of dark leafy greens
1 tin of cannelloni beans
1/2 avocado
1 lemon zest
1 heaped teaspoon of mustard
Pumpkin seeds
Salt and Pepper to taste
Steam broccoli until cooked through
Fry off salmon fillets in a non stick pan
Drain the beans and wash your dark leafy greens
In a small bowl mix roughly chopped broccoli, beans, mustard, half of the lemon zest and season with salad and pepper. Mix well until all combined and seasoned.
To plate up simple start with your dark leafy greens on the bottom and then add your seasoned broccoli and bean mix.
Top with cooked salmon, fresh avocado, a squeezed of lemon and some pumpkin seeds.
Probably one of the easiest and quickest salads ever.
You can also add a little garlic to your pan and i have also made it with fresh radishes which is really nice and fresh for spring !
