Banana and Coconut Pancakes

I have decided that there are a lot of tricks to the trade when it comes to making pancakes.

Did you know you really should cook in butter and not oil, to get those nice crispy edges? (I now know this).
Did you know you should let the batter sit for 5-10 minutes after blending and they will hold better when you flip them ?

These are the little enjoyable things that I have just learnt . SO to share with you my excitement here is the recipe for my new healthier looking pancakes.

Simply blend all ingredients together , let sit for 5-10 minutes (dah) and fry off in a generous amount of butter !

Top with desired topping.

This will serve two people if you eat like me or maybe three if you have portion control skills .

Banana and Coconut Pancakes

3 bananas

2 eggs

1/2 cup of oats

1/2 cup of coconut flour

1 teaspoon of baking powder

1 teaspoon of vanilla

1 teaspoon of cinnamon

1 tablespoon of ev olive oil

2 tablespoon of almond milk

Toppings- very optional

Blueberries, yoghurt and rice malt syrup .
